Gogumasun namul is another basic vegetable side dish made with sweet potato shoots that are enjoyed at Korean restaurants or at home. To prepare gogumasun namul, shoots are blanched to soften shoots, seasoned, then lightly fried with oil. Seasoning consists of very simple ingredients such as salt, minced garlic, sesame oil and sesame seeds for added texture. Sweet potato shoots are low in saturated fat, sodium, and very low in cholesterol. It is also a good source of protein, calcium, iron, and amongst others healthy nutrients.
