Dooboo Jorim - Braised Tofu - 두부조림

Doo-boo Jo-rim
Braised Tofu
두부조림

Dooboo jorim is a Korean side dish primarily made with tofu. In Korean, dooboo translates into tofu and jorim literally means braised. However, tofu is not slowly cooked but rather pan fried for few minutes and then re-fried once more with a mixture of soy sauce, gochugaru, minced garlic, green onions along with other ingredients. Dooboo jorim is very easy to make and also doesn't require a lot of time to prepare either.

This side dish is considered very nutritious and healthy as tofu, soy bean curd, is cholesterol free, low in saturated fat and rich in minerals & vitamins such as iron and calcium. Tofu is also a great source of protein with low calories and known to help lower bad cholesterol levels when compared with other types of protein foods.

Other popular tofu-based dishes are dooboo kimchi, dwenjang chigae, and soondooboo chigae.

Recipe Ingredients: Sauce
  • 2 stalks green onions, finely chopped
  • ¼ cup soy sauce
  • ¼ cup water
  • 1 tsp garlic, minced
  • ¼ tsp gochugaru, red chili pepper flakes
  • 1 tsp sesame oil
  • ½ tsp sugar
  • ½ tsp sesame seeds
Recipe Ingredients
  • 1 package of tofu (firm)
  • Olive oil
Cooking Directions
  1. Finely chop green onions and garlic to prepare for sauce. In a small bowl, mix all the sauce ingredients together and set aside.
  2. Cut tofu into desired thin slices. It shouldn't be more than ¼ inch thick for optimal cooking time.
  3. In a flying pan, add olive oil and pan-fry tofu slices until brown on both sides.
  4. Add sauce onto frying pan and simmer for another 8-10 minutes.
  5. Remove from pan and neatly place them on a serving plate as desired. Add leftover sauce from pan on top of each tofu. Serve hot and enjoy.
